This cheese spread is a versatile dip or topper. Plus, it can be prepared ahead to save time during snack, meal or game time. With just a few simple ingredients — including some great local craft beer — it provides a cheesy bit to your favourite Canadian-made crackers or bread.

Cheddar Beer Spread

2-1/2 cups grated old cheddar cheese

2 garlic cloves, minced

1/2 tsp (2.5 mL) dry mustard

1 tbsp (15 mL) Worcestershire sauce

Article content

2 drops Tabasco sauce

1/2 cup (125 mL) preferred local craft beer, at room temperature

In a mixing bowl, combine cheese, garlic, mustard, Worcestershire sauce, Tabasco sauce and salt. Gradually beat in beer. Adjust seasonings to taste.

Pack spread into crocks, small souffle dishes or custard cups, filling to the brim. Refrigerate overnight so flavours can blend. Will keep two weeks in refrigerator.
