Note: If using fresh chicken breast instead, season two medium boneless, skinless chicken breasts with salt and pepper. 6 cups (1.5L) chicken broth

1 (540ml) can white kidney beans, rinsed and drained

3 tsp. chicken bouillon powder

1 tsp. dried thyme

1 tsp. dried oregano

1 tsp. dried parsley

½ tsp. dried basil

½ tsp. smoky paprika

1 large yellow potato, peeled and cubed

2 to 3 cups rotisserie chicken, diced

1½ cups green beans, trimmed and chopped into 1-inch pieces

1 (398ml) can diced fire roasted tomatoes with juices

Instructions:

In a large pot, heat olive oil over medium heat. Add onion, carrots and celery. Sauté for 5 minutes, until softened.

Add garlic and continue to fry until garlic is fragrant. Sprinkle flour over vegetable mixture, stirring continuously, and cook until the flour turns golden brown.
